Hi! Hello! After celebrating my birthday all weekend, it has been a slow start to the week. I’m so sorry my posts have been delayed. Back to eating home cooked meals this week, and I can’t wait! My stomach starts to freak out if I eat out for a lot of meals in a row. It’s been that way since I was a kid.

Welcome back! This week is my birthday week… Yes I celebrate all week. Actually all month! lol October is my favorite month because my birthday (duh), the weather starts to get chilly, it’s acceptable to eat more soup and Halloween! This week we went a little light on the groceries because I like to trick-or-treat myself by eating out (:

Recipe from the Week

After a week of more delicious meals, I would have to say the Sesame Chicken dish won my heart. The chicken came out so perfectly tender, I couldn’t help but mmm mMm mm the entire time I was eating it.

YIELDS:

4 Servings

TOTAL TIME:

4 hours 10 mins

Recipe

INGREDIENTS:

  • 1/4 cup low sodium soy sauce
  • 1 tbsp & 1 tsp cornstarch
  • 1/2 cup honey
  • 1 tbsp tomato paste
  • 1/4 cup finely diced onion
  • 2 cloves of garlic- minced
  • 1 tsp crushed red pepper flakes
  • 1 lb skinless chicken breasts- cut into 1 inch pieces
  • 1 red bell pepper- thinly sliced
  • optional: sesame seeds, thinly sliced green onion, steamed broccoli florets and cooked rice.

DIRECTIONS:

1) In a large bowl, whisk together soy sauce and cornstarch until smooth.

2) Add honey, tomato paste, diced onion, garlic and crushed red pepper flakes. Mix all together.

3) Add chicken and bell pepper to the sauce. Toss sauce to coat all.

4) Transfer to slow cooker and cook on low for 4 hours.

5) Serve over rice and add steamed broccoli. Top with green onion if desired.

Hello again! Happy Monday (: I’m sorry I didn’t get around to posting this grocery haul yesterday… we ended up getting a PUPPY! So the day slipped away from me, trying to get the little guy settled. We haven’t decided a name yet so if you have any ideas for a red doberman, drop them in the comments! Anyway, back to food!

Coffee, coffee, coffee can’t you see

Coffee or Tea?

Or neither?

Any type of caffeine get you through the day?

Coffee does hypnotize me. Not only do I need coffee to wake up “on the right side of the bed”, but I also just love the taste of coffee.

I like it hot. I like it iced. I like it black. I like it with cream and sugar. I like it with honey. I like it with milk. I like it plain. I like it fancy.

I’m interested in trying other drinks to get my caffeine fix.

More dogs or one dog?

Question for the people. Is it a good idea to get more than one dog?

So I have the best goodest boy and a very handsome cat(pictures of these cuties found under the photography page) already but I can’t help but wonder… Should I get another pet?

I know others have thought this because I see people with two or more dogs all the time or ya know cat ladies with more than one cat. It’s common.

BUTTTTTTTTTTTTTT, is it a good decision?

Every other weekend my boyfriend and I debate going to meet a puppy. And some weekends a kitten. If we were going to get another pet, I’m leaning towards another dog over cat because the thought of having another litter box in the house EW!

I mean come on! Anytime I look at puppies I want one! They are SO adorable and small, I love them all! Besides how cute they are, my dog Greyson would love to have a playmate. Keep him company when we’re gone and someone to run around with in the backyard. Plus I wouldn’t mind adding another girl to the family!

Most days I’m content with my two boys (the dog and cat)! But sometimes the thought pops in my head, “would it be that much different if we got another dog?” At this moment I would say the one thing stopping me is the amount of animal hair we already have in the house, can I deal with more?

Recipe from the Week


Yum yum yum! After eating all five delicious meals, I would have to say the Stuffed Peppers were my favorite. They were so tasty that I thought about them for the rest of the week!

YIELDS:

6 Stuffed Peppers

TOTAL TIME:

1 hour 20 mins

Recipe

INGREDIENTS:

  • 1/2 cup of rice- uncooked
  • 2 tbsp. extra virgin olive oil, plus extra for drizzling
  • 1 medium onion chopped
  • 1 tbsp. tomato paste
  • 3 cloves of garlic- minced
  • 1 lb. of ground turkey/beef
  • 1 (14.5-oz.) can of diced tomatoes
  • 1tsp. dried oregano
  • himalayan salt
  • fresh ground black pepper
  • 6 bell peppers- top & cores removed
  • 1 cup shredded mozzarella cheese

DIRECTIONS:

1) Preheat oven to 400°. In a rice cooker (which is what I use) or a small saucepan, prepare rice according to package instructions.

2) In a large skillet over medium heat, heat the olive oil. Add onion and cook until soft. (About 5 mins.)

3) Add tomato paste and garlic, stir it together for another minute.

4) Add ground turkey or beef and cook. Using a spatula or spoon break up the meat until it is cooked and no longer pink. (About 5-6 mins.) If using ground turkey there will not be any fat to drain, but if using beef drain the fat.

5) With the cooked ground turkey or beef in the skillet add the cooked rice and diced tomatoes. Season with salt, pepper and oregano. Let the sauce reduce, by letting it simmer for about 5 minutes.

6) Place peppers with the open side up in a baking dish (9″x 13″ is what I use). Drizzle olive oil on top of the peppers.

7) Scoop some turkey mixture and add it into the peppers until they are close to full. Sprinkle the tops with mozzarella cheese, and cover entire baking dish with tin foil.

8) Let peppers cook covered for about 35-40 minutes and then remove the tin foil and place back in oven for another 10 more minutes.

9) Add salsa on top if you like it spicy! Then enjoy while it’s hot!

So every week my fam bam prefers to eat delicious home cooked meals on weeknights and eat out on weekends. My fam bam being my lover and myself so we shop for two. We go to the grocery store every Sunday. I like to plan five meals for the week, and write down everything I’m going to need before we head out.
